Yep, me too, and for this one, you don't have to turn on the oven - even better.

If you're craving something sweet these Date Rice Krispie Balls come together quickly.

The bonus is that you can keep them in the fridge for a couple of weeks for a guilt-free snack. Well, if they last that long.

But more often than not, I pre-make these for a Holiday or when I prepare for a gettogether or party.

It's such an easy recipe and they keep so well as a make-ahead treat you can quickly check it off your list when you already have several dishes to think about and prep.

You want some simple dessert recipes done and ready. Valentine's Day is over but St. Patrick's Day and Easter are right around the corner.

  • We can make as many sweet and chewy treats as we like and these balls offer even a healthier version of a rice krispie treat.

Rice Krispie Balls Ingredients

  • Dairy-free butter - is a healthy fat that helps these treats solidify and create a delicious texture.
  • Maple syrup - added as a healthy sweetener with a caramel-like flavor.
  • Dates - are a natural caramelly sweetener, and they create a chewy texture in contrast to the rice crisps.
  • Walnuts - add a crunchy and nutty bite that also balances out the sweetness.
  • Shredded coconut - has a naturally sweet tropical and nutty flavor.
  • Vanilla extract - adds a warm vanilla-flavored touch to the treats.
  • Vegan Rice Krispie type of cereal - have a crunchy texture that is the main base to these rice krispie balls.

📋No bake treats

  • Put 1 cup of the rice Krispie type cereal in a ziplock baggie. Crush with a rolling pin or with the side of a glass. Roll it back and forth so that you can use the mixture as a crumb cover on the finished balls. Set aside.
  • Melt the butter and syrup together in a large bowl in the microwave for a few seconds.
  • Add the dates, nuts, coconut, and vanilla. Mix well.
  • Turn in the rice Krispie type cereal until well combined.
  • Put in the refrigerator for about an hour. Take out of the refrigerator and roll into balls.
  • Roll each ball in the crush crumb mixture to cover.
  • Stack in a pile to serve or refrigerate.

Ingredients

  • 4 ounces dairy-free butter
  • ½ cup maple syrup
  • 8 ounces dates, chopped

  • 1 cup shredded coconut
  • 1 teaspoon vanilla extract
  • 2 cups of Vegan Rice Krispie type of cereal
  • 1 cup another 1 of the rice krispie cereal for the coating
